½ loaf country bread, sliced
½ bottle red wine
2 (64 ounces) cartons beef stock
1 cup Gruyere cheese, shredded
2 tablespoons salt
Directions
Peel the onions and thinly slice them.
Brown the butter in a large pot on medium-high heat.
Sauté the onions for 15 minutes, or until they're light brown and soft.
Slice the bread into ½-inch thick slices and shred the cheese.
Add the wine and beef stock to the pot with the onions, and cook on high for 1 hour.
Preheat the oven to 425 F.
Place the sliced bread on a cookie sheet, then top with the cheese. Toast the bread in the oven for 8 minutes, or until the cheese is melted.
Salt the soup to taste and serve it topped with the cheesy bread.
