- 1 cup of sushi rice, cooked to package instructions
- ½ pound cooked crab meat
- 1 small cucumber, cut in round slices
- ½ avocado, sliced
- 2 sheets of roasted seaweed
- 2 scallions, chopped
- 1 inch of ginger, grated
- 1 clove of garlic, grated
- 1 tablespoon Dijon mustard
- 3 teaspoons soy sauce
- ¼ cup apple cider vinegar
- 1 lime, juiced
- ½ cup extra virgin olive oil
- Cook sushi rice to package instructions. Then place the sushi rice in bowl.
- Add crab, cucumbers, avocado, roasted seaweed, and scallions on rice in sections. Sprinkle some sesame seeds if using.
- Now make dressing by whisking together in a bowl ginger, garlic, Dijon mustard, soy sauce, apple cider vinegar, lime juice, and oil.
- Pour some dressing on the rice bowl and enjoy.
