Zucchini Apple Pie Recipe

Ingredients
  • 2 to 3 zucchinis, sliced
  • 2 tablespoons lemon juice
  • ¼ teaspoon salt
  • 1 cup brown sugar
  • 2 teaspoons cinnamon
  • 1 ½ teaspoons cream of tarter
  • ¼ teaspoon nutmeg
  • 3 tablespoons all-purpose flour
  • 1 frozen pie crust
Directions
  1. Preheat the oven to 400 F.
  2. Peel the zucchini and cut off the ends.
  3. Slice each zucchini in half lengthwise, and using a spoon, scrape out the seeds in the center.
  4. Slice the zucchini into ¼-inch half-moon shapes.
  5. Mix the zucchini with the lemon juice and salt, and sauté on medium heat for 5 minutes.
  6. While that is cooking, in a large bowl combine the sugar, cinnamon, cream of tarter, nutmeg, and flour.
  7. Add the cooked zucchini to the flour mixture and stir to coat.
  8. Fill frozen pie shell with mixture.
  9. Bake the pie for 35 to 40 minutes, until golden brown.
  10. Let the pie cool on a cooling rack for 1 hour or more before slicing, then serve and enjoy.
