Pineapple Shrimp Fried Rice Recipe

Ingredients
1 tablespoon sesame oil
1 onion, diced
1 red pepper, diced
3 cloves garlic, minced
10 ½ ounces cooked shrimp
½ cup frozen peas
3 cups cooked rice, chilled
1 (14-ounce) can pineapple chunks, drained
2 tablespoons pineapple juice
¼ cup vegetable stock
2 tablespoons soy sauce
Directions
Add the sesame oil to a wok or large frying pan and heat on a medium-high setting.
Fry the onion and pepper until softened, about 5 minutes.
Add the shrimp and garlic and cook for another 2 minutes.
Add the rice, peas, pineapple chunks, and vegetable stock. Cook for 5 minutes, stirring frequently.
Pour over the pineapple juice and soy sauce. Give everything a final stir.
