Pineapple Shrimp Fried Rice Recipe

Ingredients
  • 1 tablespoon sesame oil
  • 1 onion, diced
  • 1 red pepper, diced
  • 3 cloves garlic, minced
  • 10 ½ ounces cooked shrimp
  • ½ cup frozen peas
  • 3 cups cooked rice, chilled
  • 1 (14-ounce) can pineapple chunks, drained
  • 2 tablespoons pineapple juice
  • ¼ cup vegetable stock
  • 2 tablespoons soy sauce
Directions
  1. Add the sesame oil to a wok or large frying pan and heat on a medium-high setting.
  2. Fry the onion and pepper until softened, about 5 minutes.
  3. Add the shrimp and garlic and cook for another 2 minutes.
  4. Add the rice, peas, pineapple chunks, and vegetable stock. Cook for 5 minutes, stirring frequently.
  5. Pour over the pineapple juice and soy sauce. Give everything a final stir.
