Sweet Potato Casserole With Bacon Recipe

Ingredients
  • 3/4 pound bacon slices
  • 4 large sweet potatoes, peeled and chopped
  • 4 tablespoons unsalted butter
  • 1/3 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup brown sugar
  • 1 cup shredded Gruyère cheese
Directions
  1. Preheat oven to 400 F.
  2. On a baking sheet lined with a cooling rack, place the bacon. Bake for 10 to 12 minutes until crispy.
  3. Peel and roughly chop the sweet potatoes.
  4. Bring a large pot of water to a boil, and add the cubed potatoes. Cook for 20 minutes.
  5. Once the bacon is no longer hot, roughly chop it into crumbles.
  6. Drain the sweet potatoes, and place them back into the pot.
  7. Add the butter, heavy cream, salt, pepper, and brown sugar to the pot.
  8. Using a potato masher and a wooden spoon, mash, and stir to combine the ingredients.
  9. Pour the sweet potato mixture into a 9x13-inch baking dish. Spread evenly.
  10. Top with the shredded Gruyère cheese.
  11. Sprinkle the crumbled bacon on top.
  12. Bake for 10 minutes until the cheese is melted.
