Ingredients
  • ½ lime
  • 1 teaspoon rose simple syrup
  • 6 to 8 fresh mint leaves, with a few small sprigs for garnish
  • ½ cup dry rosé wine
  • ¼ cup club soda
  • Lime slice, for garnish
Directions
  1. Cut the halved lime into wedges, place them in a cocktail shaker with the rose syrup, and muddle to release the lime juice. (Pro tip: The back of a spoon works just fine for this if you don't have a muddler.) 2. Add the mint leaves and gently muddle to release the essential oils. Pour in the wine, add ice, and shake the mixture. Strain the contents of the shaker into a Collins glass and top off with a splash of soda water.
  2. Rub mint leaves around the rim of the glass, discard, and garnish with more mint sprigs and the lime sauce.
