Mescal Cocktail Recipe With Carrot Shrub

Ingredients
  • 1 large carrot
  • ¾ cup white sugar
  • ¾ cup apple cider vinegar
  • 2 pieces cardamom
  • 2 ounces mescal
  • 1 ounce carrot shrub
  • ¾ ounce ginger syrup
  • ½ ounce lime juice
  • 4 dashes Bigallet thyme liqueur
  • Pinch of salt
  • Sprig of rosemary
  • Sprig of mint
  • Ginger beer, to top
Directions
  1. Make the shrub: Combine all all ingredients in a blender and blend on high until liquified. Set aside 2. Combine all ingredients except for the rosemary, mint and ginger beer in a shaker and shake hard. Double strain into a Collins glass with ice and top with ginger beer.
  2. Garnish with rosemary and mint to serve.
