Recipe: Aperol Snow Cone

4 to 6 servings
- ½ cup sugar
- ¼ cup water
- 3 mint sprigs
- 1 lime, zested with a peeler
- One 1-inch piece ginger, sliced
- ½ cup Aperol
- Finely crushed ice, for serving
- Lime wedges, for serving
- In a small saucepan, combine the sugar, water, mint, lime zest and ginger over medium-high heat. Bring the mixture to a simmer and continuously stir until the sugar has completely dissolved, 2 minutes. Remove from the heat and allow to cool completely.
- Strain the mixture and reserve the syrup in a small bowl. Stir in the Aperol to incorporate.
- Pour 2 to 3 tablespoons of syrup over each cup of crushed ice, then serve with lime wedges.
