Vegan Avocado Mousse Recipe

Ingredients
  • 1¾ cups ripe, Fresh California Avocado--peeled, seeded and quartered
  • ¾ cup, minus 1 tablespoon, maple syrup
  • 3 tablespoons orange juice
  • ¼ teaspoon Maldon salt
  • ⅓ cup, plus 1 tablespoon, cocoa powder
  • ½ cup, minus 1 tablespoon, coconut oil
  • 1 teaspoon vanilla extract
  • ⅓ cup, plus 1 tablespoon, agave
  • ¾ cup cold water
  • Cocoa nibs, for garnish
Directions
  1. In a medium bowl, add all the ingredients except the water. Start to purée the mixture using an immersion blender. Slowly add the cold water in a steady stream until shiny and smooth. Top with raw cocoa nibs and serve.
