Ingredients
  • 4 Persian cucumbers, diced
  • 4 Roma tomatoes, diced
  • ¼ red onion, diced
  • 2 tablespoons mint leaves, chopped
  • 2 tablespoons olive oil
  • ½ cup lemon juice
  • 1 teaspoon salt
  • ½ teaspoon pepper
Directions
  1. In a large bowl, add the cucumbers, tomatoes, and onion.
