Smoked Salmon Pasta Recipe

Ingredients
  • 1 small red chili
  • 12 cherry tomatoes
  • 1 clove garlic, crushed
  • 1 lemon
  • 8 ounces spaghetti
  • 1 tablespoon + 1 teaspoon olive oil, divided
  • 4 ounces smoked salmon, chunked
Directions
  1. De-seed and chop the chili, slice each tomato in half, and peel and crush the garlic.
  2. Zest and juice the lemon.
  3. Cook the spaghetti according to the instructions on the box.
  4. Heat 1 tablespoon of olive oil in a large frying pan.
  5. Sauté the pepper and garlic for about 1 minute, stirring constantly, then turn off the heat.
  6. Drain the cooked pasta and add it to the frying pan with the peppers and garlic.
  7. Mix the lemon juice and 1 teaspoon of the zest into the pan, then stir in the salmon, tomatoes, and remaining olive oil, along with salt and pepper to taste.
  8. Cook the salmon pasta over medium heat for 5 minutes, stirring constantly.
  9. Garnish the dish with snipped chives if desired.
