Preheat the oven to 375 F and line a baking sheet with parchment paper.
In a medium bowl, combine the flour, baking soda, and salt.
In another large bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy.
Add the vanilla and egg to the butter and sugar and continue to beat until well mixed. Slowly add the flour mixture to the wet ingredients until just combined.
Fold in the oats, coconut, pecans, and chocolate chips.
Using a spoon or scoop, drop 2 tablespoon-sized balls onto the parchment-lined baking sheet, about 2 inches apart.
Bake the cookies for 8 to 10 minutes, or until they're golden around the edges. This recipe will make 2 batches.
Remove the cookies from the oven and allow them to cool on the baking sheet for 1 to 2 minutes before transferring to a wire rack to cool completely. Serve and enjoy!
