Classic New York-Style Cheesecake Recipe

Ingredients
  • 2 ½ cups graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 1 ½ cups + 2 teaspoons sugar, divided
  • 1 pinch of salt
  • 4 (8-ounce) packages of cream cheese, at room temperature
  • ½ cup heavy cream
  • 4 eggs, at room temperature
  • 2 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup flour
Directions
  1. Preheat the oven to 350 F. Liberally grease a 10-inch springform pan.
  2. In a mixing bowl, combine the graham cracker crumbs, butter, 2 teaspoons sugar, and salt. Press into an even layer on the bottom of the springform pan. Bake for 8 minutes, then remove from the oven and cool.
  3. In a large bowl, mix the cream cheese and 1 ½ cups sugar until smooth and no lumps remain. Add the heavy cream and eggs, and mix until combined.
  4. Add the vanilla, sour cream, and flour. Mix until smooth.
  5. Pour the filling onto the crust in the springform pan. Bake for 1 hour. The turn the oven off and let the cheesecake cool in the oven for 5 hours.
  6. Refrigerate until cool, and then serve.
