Apple Harvest Salad Recipe

Ingredients
  • 7 ounces mixed lettuce leaves
  • ½ cup fresh parsley
  • 2 red apples
  • ½ cup pecans
  • ¼ cup blue cheese
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
Directions
  1. Begin the recipe by placing the mixed salad leaves into a large mixing bowl.
  2. Chop the parsley into fine pieces.
  3. Core and chop the apples into 1-inch cubes.
  4. Add the apples to the salad leaves in the bowl, followed by the pecans and chopped parsley, and crumble the blue cheese with your hands, letting it fall into the bowl as well.
  5. In a separate, small mixing bowl, mix together the extra virgin olive oil, balsamic vinegar, and honey.
  6. Pour the salad dressing over the salad and mix the salad together to coat.
