Jackfruit BBQ Sandwich Recipe

Ingredients
1 tablespoon olive oil
2 (14.5-ounce) cans jackfruit, drained
1 small yellow onion, thinly sliced
1 cup barbecue sauce
1 teaspoon paprika
1 teaspoon garlic powder
½ cup mayonnaise (or vegan substitute), divided
1 tablespoon apple cider vinegar
1 teaspoon lemon juice
1 tablespoon granulated sugar
2 cups shredded coleslaw mix
4 hamburger buns
Directions
Heat the olive oil in a large skillet over medium heat.
Cook the jackfruit and onion for 5 to 8 minutes, until the jackfruit is warm.
Using the back of a spoon, mash the jackfruit until it resembles pulled pork. Remove the seeds and casings.
Add the barbecue sauce, paprika, garlic powder, 1 teaspoon salt, and ½ teaspoon pepper to the jackfruit, and stir to combine.
Cook the seasoned jackfruit for 3 to 4 minutes until warm.
Cover the jackfruit to keep it warm and set it aside.
Mix together ¼ cup mayonnaise, vinegar, lemon juice, sugar, and ¼ teaspoon salt.
Toss the coleslaw mix with the dressing until evenly coated.
Lightly toast the hamburger buns under the broiler for 1 to 2 minutes.
Spread the remaining mayonnaise on the toasted buns.
Top the buns with the jackfruit mixture and finish with the coleslaw.
