Portuguese Kale Soup Recipe

Ingredients
  • 2 cloves garlic
  • 2 white potatoes
  • 4 ½ ounces Spanish chorizo
  • 2 tablespoons vegetable oil
  • 2 cups kale
  • 3 cups chicken broth
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
Directions
  1. Peel and chop the garlic into thin slices.
  2. Peel and dice the potatoes into 1-inch cubes.
  3. Slice the chorizo into coin-like shapes.
  4. Heat the vegetable oil in a saucepan over medium-high heat. Sauté the garlic, potatoes, kale, and chorizo in the oil for 5 minutes.
  5. After 5 minutes, add the chicken broth, salt, and black pepper, and turn the heat down to medium-low for 25 minutes. Stir the soup after 12 minutes.
  6. After 25 minutes, mix everything together a final time, and serve.
