Portuguese Kale Soup Recipe

Ingredients
2 cloves garlic
2 white potatoes
4 ½ ounces Spanish chorizo
2 tablespoons vegetable oil
2 cups kale
3 cups chicken broth
¼ teaspoon salt
¼ teaspoon black pepper
Directions
Peel and chop the garlic into thin slices.
Peel and dice the potatoes into 1-inch cubes.
Slice the chorizo into coin-like shapes.
Heat the vegetable oil in a saucepan over medium-high heat. Sauté the garlic, potatoes, kale, and chorizo in the oil for 5 minutes.
After 5 minutes, add the chicken broth, salt, and black pepper, and turn the heat down to medium-low for 25 minutes. Stir the soup after 12 minutes.
After 25 minutes, mix everything together a final time, and serve.
