Red Velvet Cookies Recipe

Ingredients
  • ½ cup butter
  • ½ cup white sugar
  • ⅓ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon red food coloring
  • 1 ⅔ cups all purpose flour
  • 2 tablespoons cocoa powder
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup white chocolate chips
Directions
  1. In the bowl of a stand mixer, beat the butter and sugars on a medium speed until smooth and fluffy — about 4 minutes. You can also do this by hand with a wooden spoon.
  2. Add the egg, vanilla extract, and red food coloring and mix until well-combined.
  3. Sift in the flour, cocoa powder, baking soda, baking powder, and salt and mix on a low speed until combined into a thick dough.
  4. Add the white chocolate chips and mix them through.
  5. Place the dough in the fridge to chill for 1 hour, or in the freezer for about 25 minutes.
  6. Preheat the oven to 350 F and line two baking sheets with parchment paper.
  7. Roll the dough into balls with your hands and place them on the baking sheets, leaving enough space between them for spreading.
  8. Bake for 10 to 12 minutes, or until they're crinkly on top and set around the edges.
  9. If desired, place a few extra white chocolate chips on top of cookie after you pull them from the oven.
  10. Leave the cookies on the baking tray for about 15 minutes before using a spatula to transfer them to a wire rack to cool completely.
