- 1 yellow onion, diced
- 1 pound ground beef
- 1 teaspoon salt
- ½ teaspoon pepper
- 8 ounces cream cheese
- 2 cups shredded cheddar cheese, divided
- ¼ cup sliced dill pickles
- ¼ cup thousand island dressing
- Preheat the oven to 350 F. Spray an 8x8-inch baking dish with nonstick cooking spray.
- In a medium-sized skillet over medium heat, add the onion, beef, salt, and pepper. Break up the beef with a wooden spoon. Cook until no longer pink, about 8 minutes.
- In a large bowl, add the cream cheese, cooked beef and onions, and 1 cup of shredded cheddar cheese. Stir well.
- Pour the mixture into the prepared baking dish. Top with remaining 1 cup of shredded cheddar cheese.
- Bake for 12 minutes.
- Remove the dish from the oven. Top it off with pickle slices and a drizzle of thousand island dressing.
- Serve with chips.
