Prepare the teriyaki sauce by adding the soy sauce, brown sugar, ginger paste, and honey into a bowl. Whisk to combine and set aside.
Place a saucepan on the stove top. Turn the heat to medium. Cook the garlic and shallot until light brown and fragrant. Add in the chicken and cook for about 3 minutes on each side.
Add in the pineapple and red bell pepper chunks and turn the heat up to medium-high. Cook the mixture, stirring occasionally, for 10 minutes.
Pour the prepared teriyaki sauce over the mixture and allow to simmer for at least 5 minutes, until reduced.
Dish the pineapple teriyaki chicken over rice, if desired. Garnish with chopped scallions.
