- 1 cup black beans
- 1 cup black-eyed peas
- 1 cup canned corn
- ½ red onion
- ½ red bell pepper
- ½ orange pepper
- 2 tablespoons extra virgin olive oil
- 2 tablespoons honey
- 2 tablespoons lemon juice
- ¼ teaspoon salt
- Place the drained black beans, black-eyed peas, and corn in a serving bowl.
- Chop the red onions, red bell pepper, and orange bell pepper into ½-inch cubes and place them into the same serving bowl.
- Peel and dice the avocado into ½-inch cubes.
- Pour the extra virgin olive oil, honey, lemon juice, and salt into a mixing bowl and mix together.
- Pour the dressing into the serving bowl and mix everything together before adding in the chopped avocado. Gently mix to combine.
- Serve with optional tortilla chips.
