Strawberry Cobbler Recipe

Ingredients
2 pounds fresh strawberries, stemmed and quartered
1½ cups granulated sugar, divided, plus extra for topping
2 tablespoons cornstarch
2 teaspoons lemon juice
1 cup all-purpose flour
1½ teaspoons baking powder
½ teaspoon salt
1 cup whole milk
1 teaspoon vanilla extract
½ cup butter, melted and cooled
Directions
Preheat the oven to 350 F.
In a medium-sized bowl, toss the strawberries with ½ cup sugar, the cornstarch, and the lemon juice.
In another bowl, combine 1 cup of sugar with the flour, baking powder, salt, milk, and vanilla extract. Slowly whisk in the melted butter.
Grease an 8x11-inch baking dish. Pour the batter into the baking dish, and top with strawberries. Do not stir!
Bake for 40 to 45 minutes, or until golden brown on the edges.
Serve immediately, with vanilla ice cream or whipped cream, as desired.
