St. Patrick's Day Cupcakes Recipe

Ingredients
1 ¾ cups flour
1 3.4-ounce package of instant pistachio pudding mix
2 teaspoons baking powder
⅔ cups sugar
¼ teaspoon salt
2 eggs
1 ¼ cup whole milk
½ cup vegetable oil
1 teaspoon vanilla extract
1 tub green vanilla funfetti frosting
20 Rolos
Directions
Preheat the oven to 375 F. Line two 12-muffin tins with liners. You will make 20 total cupcakes
In a large bowl, whisk together the flour, pudding mix, baking powder, sugar, and salt.
In a separate bowl, add the eggs, milk, oil, and vanilla extract. Mix to combine.
Add the dry ingredients to the wet ingredients. Stir well to combine.
Using a cookie scoop, scoop the dough into the muffin liners.
Bake for 18-22 minutes. Remove the cupcakes from the oven and allow them to completely cool.
Top each cupcake with frosting and one Rolo as the "pot of gold."
