- 1 (3-pound) pork loin
- 1 pineapple
- 2 avocados
- 1 red onion
- 20 corn tortillas
- 5 sprigs cilantro
- 10 radishes
- garlic salt, to taste
- pepper, to taste
- Preheat the Traeger or other smoker to 225 F.
- Season the pork with garlic salt and pepper to taste, and place it on the grill. Smoke the pork for two hours.
- After two hours, turn the heat up on the smoker to 350 F. Cook the pork for another hour.
- While the pork is cooking, add the avocados to a bowl. Mash the avocados with a fork and sprinkle in garlic salt and pepper to taste.
- Chop the pineapple into small chunks and dice the red onion. Finely chop the cilantro and slice the radishes in half.
- Once the pork is ready, remove it from the grill. Slice the pork into thin strips.
- To assemble the tacos, start with a corn tortilla as the base. Spread the tortilla with the mashed avocado, and then place pieces of pork on top. Sprinkle pineapple and red onion on top.
- Garnish the tacos with chopped cilantro and sliced radishes, then serve.
