Smoked Pork Tacos Recipe

Ingredients
  • 1 (3-pound) pork loin
  • 1 pineapple
  • 2 avocados
  • 1 red onion
  • 20 corn tortillas
  • 5 sprigs cilantro
  • 10 radishes
  • garlic salt, to taste
  • pepper, to taste
Directions
  1. Preheat the Traeger or other smoker to 225 F.
  2. Season the pork with garlic salt and pepper to taste, and place it on the grill. Smoke the pork for two hours.
  3. After two hours, turn the heat up on the smoker to 350 F. Cook the pork for another hour.
  4. While the pork is cooking, add the avocados to a bowl. Mash the avocados with a fork and sprinkle in garlic salt and pepper to taste.
  5. Chop the pineapple into small chunks and dice the red onion. Finely chop the cilantro and slice the radishes in half.
  6. Once the pork is ready, remove it from the grill. Slice the pork into thin strips.
  7. To assemble the tacos, start with a corn tortilla as the base. Spread the tortilla with the mashed avocado, and then place pieces of pork on top. Sprinkle pineapple and red onion on top.
  8. Garnish the tacos with chopped cilantro and sliced radishes, then serve.
