- 2 cups fresh pineapple, diced
- ¼ cup red onion, diced
- 2 tablespoons jalapeño pepper, diced
- 1 teaspoon minced garlic
- ⅓ cup fresh cilantro, chopped
- zest of 1 lime
- 2 tablespoons fresh lime juice
- ¼ teaspoon salt
- Place the diced pineapple in a colander and allow it to drain for a few minutes. Then, transfer it to a small mixing bowl.
- Add the onion, jalapeño, garlic, cilantro, zest, lime juice, and salt to the pineapple. Stir to combine. Adjust seasoning as necessary.
- Serve with tortilla chips or on tacos.
