Vegan cinnamon rolls recipe

Ingredients
  • 1 cup warm water
  • ½ cup + 2 tablespoons white sugar, divided
  • 1 package active dry yeast
  • 5 tablespoons softened vegan butter, divided
  • 3 ¼ cups flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup brown sugar
  • 2 tablespoons cinnamon
  • 1 ½ cups powdered sugar
  • 3 tablespoons oat milk
Directions
  1. In the bowl of a stand mixer fitted with the dough hook, combine the warm water and 2 tablespoons sugar. Sprinkle the yeast on top. Allow the yeast to activate for 5 minutes.
  2. Once the yeast is ready, turn the speed of the mixer to low and gradually add half the flour. Mix in 2 tablespoons softened vegan butter. Continue to gradually add in the remaining flour, along with the salt and baking powder. Once the flour is incorporated, turn the speed on the mixer up to medium. Knead the dough in the mixer for 3 minutes.
  3. The dough will pull away from the sides of the bowl when it's done. Once done, transfer the dough to a bowl sprayed with cooking spray to prevent sticking. Set the dough aside, and allow it to rise for 30 minutes, doubling in size.
  4. Preheat the oven to 350 F. Melt the remaining 3 tablespoons vegan butter in the microwave. Mix together the remaining ½ cup sugar, brown sugar, and cinnamon.
  5. After the dough has risen, sprinkle flour on a flat surface. Use a rolling pin to roll the dough out to a ¼-inch thick rectangle.
  6. Brush the melted butter on the rolled dough. Sprinkle the cinnamon-sugar mixture over the top.
  7. Using your hands, roll the dough into a tight log. Cut off the uneven ends and slice the dough into 8 rolls.
  8. Grease a 9x13-inch baking dish with cooking spray or vegan butter. Place the prepared cinnamon rolls in the dish. Set the cinnamon rolls aside to allow them to rise for an additional 10 minutes.
  9. Bake the cinnamon rolls for 18-20 minutes, until golden brown. Once baked, remove them from the oven to allow them to slightly cool.
  10. Whisk together the powdered sugar and oat milk until it's completely smooth. Drizzle the glaze over the top of the cinnamon rolls before serving.
