Southern Meatloaf Recipe

Ingredients
  • 1 pound ground beef
  • ¼ cup bread crumbs or crushed saltine crackers
  • ½ small onion, finely chopped
  • ¼ cup finely chopped green bell pepper
  • 1 egg
  • 1 teaspoon paprika
  • ¼ teaspoon salt
  • ½ teaspoon dried thyme
  • ¼ teaspoon ground black pepper
  • ⅓ cup ketchup
  • 2 tablespoons milk
  • ½ cup barbecue sauce
Directions
  1. Add the milk and bread crumbs to a bowl and let them soak for 5 minutes.
  2. In a large bowl, add the ground beef, softened bread crumbs, onions, green bell peppers, egg, paprika, salt, black pepper, dried thyme, parsley, and ketchup, and stir with a spatula for 1 minute or until fully mixed.
  3. Preheat the oven to 350 F.
  4. Add the meat to a mold, making sure it comes up to the edge of the mold. (If you only have a large mold and wish to make a smaller meatloaf use aluminum foil to fill empty space)
  5. Bake for 45 minutes.
  6. Brush the top of the baked meatloaf with barbecue sauce and bake for an additional 15 minutes.
  7. Cool down for 5 minutes before cutting, then serve the meatloaf.
