Heat the olive oil in a large frying pan and fry the diced chicken until it's cooked through — about 5 minutes. Remove the chicken from the pan and set it aside.
Heat the sesame oil in the pan and fry the onion and pepper until softened — about 5 more minutes. Then, add the garlic and cook for another minute, stirring constantly.
Add the peas, corn, and ketchup, and stir well. Cook for another 2-3 minutes.
Push the contents of the pan to one side and pour the beaten eggs into the empty space. Stir the egg until scrambled, then mix everything together again.
Add the rice, chicken, and spring onions and stir well. Cook for a few more minutes, until the rice is heated through.
Pour the soy sauce on top, along with any additional seasoning to taste, and stir again.
