Ingredients
1 cup all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
5 eggs, separated
1 cup granulated sugar, divided
2 teaspoons vanilla extract
⅓ cup whole milk
1 (12-ounce) can evaporated milk
1 (14-ounce) can sweetened condensed milk
¼ cup heavy cream
2 cups heavy cream
¼ cup powdered sugar
½ teaspoon vanilla extract
Directions
Preheat the oven to 350 F and grease a 9x13-inch baking pan.
In a large bowl, whisk together the flour, baking powder, and salt, then set it aside.
Add the egg yolks and ¾ cup granulated sugar to another large bowl.
Using an electric mixer, beat the egg yolk mixture for about 2 minutes until it is a pale yellow color.
Add 2 teaspoons of vanilla extract and the whole milk. Beat until combined.
Pour the egg yolk mixture into the bowl with the dry ingredients; gently mix until combined.
In a separate bowl, beat the egg whites on high speed for about 1 minute, until soft peaks form.
Add the remaining ¼ cup of sugar and beat for another minute until the egg whites become stiff.
Fold the egg white mixture into the batter. Gently mix until just combined.
Pour the batter into the prepared pan, evenly smoothing out the surface.
Bake the cake for 25 to 35 minutes in the preheated oven until a toothpick inserted into the center comes out clean.
Set the cake aside to cool completely.
Meanwhile, mix the evaporated milk, sweetened condensed milk, and ¼ cup heavy cream in a medium bowl.
Use a fork to poke holes all over the top of the cake.
Pour the milk mixture over the entire cake.
Cover the cake and chill it in the refrigerator for at least 4 hours to allow the liquid to absorb into the cake.
Once the cake has chilled, add 2 cups of heavy cream to a large mixing bowl and beat on medium speed until the cream starts to thicken.
Add the powdered sugar and ½ teaspoon vanilla extract. Continue beating on medium speed until soft peaks form.
Spread the whipped cream across the cake, leveling it with a spatula.
Top the cake with cinnamon or berries if desired, then cut it into squares to serve.
