Mustard-Crusted Rack Of Lamb Recipe

Ingredients
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 (2-pound) rack of lamb
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons Dijon mustard
Directions
  1. Preheat the oven to 425 F.
  2. Combine the oil, garlic, thyme, and oregano in a small bowl.
  3. Use a paper towel to pat the lamb dry. Season it with salt and pepper.
  4. Place the lamb in a roasting pan and brush it with the Dijon mustard.
  5. Sprinkle the seasoning mixture prepared in Step 2 over the top of the lamb. Press it down into the meat to make a crust.
  6. Cook the lamb for 25 minutes, or until a meat thermometer reads 145 F.
  7. Let the lamb rest for 10 minutes before slicing.
