Mexican Rice Recipe

Ingredients
  • 1 tablespoon oil
  • 1 cup long-grain white rice
  • ½ cup white onion, diced
  • 2 cloves garlic, minced
  • 2 cups broth
  • 1 8-ounce can tomato sauce
  • 1 teaspoon cumin
  • 1 teaspoon garlic granules
  • 1 teaspoon salt
  • ½ teaspoon chili powder
Directions
  1. Put the oil in a medium pot and turn the heat to medium-high.
  2. Add the rice and stir frequently for 2 minutes to toast the rice.
  3. Add the onion, garlic, broth, tomato sauce, cumin, garlic granules, salt, chili powder, and cayenne (if using). Stir well to combine.
  4. Bring to a boil, then turn the heat down to low, cover, and cook for 30 minutes. Cook time may vary based on the rice, so check it at 25 minutes to see how it's doing. Let it stand for 5 minutes before serving. Fluff with a fork.
