Gluten-Free Cornbread Recipe

Ingredients
1 ½ cups fine or medium ground cornmeal
½ cup gluten-free all purpose flour
3 tablespoons granulated sugar
1 tablespoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
¾ cup unsweetened almond milk
2 eggs
¼ cup olive oil
Directions
Preheat the oven to 425 F, and line an 8x8-inch baking pan with parchment paper.
In a mixing bowl whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
Then add in the milk, eggs, and oil, and whisk until smooth.
Pour the batter into the lined pan and bake for 15 minutes. The cornbread is done baking when an inserted toothpick comes out clean.
Allow the cornbread to become cool, and then cut into squares or slices.
