- 2 cups peanut butter
- 1 cup butter, softened
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 4 cups semisweet chocolate chips
- Combine the peanut butter, softened butter, and vanilla extract in a large bowl. Beat until creamy.
- Slowly add in 4 cups of powdered sugar, until a dough forms.
- Roll the dough into 1 inch balls and place on a lined baking sheet. Chill in the freezer for 30 minutes.
- While the peanut butter dough is chilling, melt the chocolate chips in a large, microwave-safe bowl for 30 seconds at a time, until melted.
- Remove peanut butter balls from freezer. Use a toothpick to dip the peanut butter balls in melted chocolate, leaving a small circle of peanut butter showing. Repeat until all buckeyes are dipped and the chocolate is hardened.
