In a large, flat bottomed bowl, whisk together the dairy-free milk, eggs, vanilla extract, ground cinnamon and maple syrup.
Warm a skillet over medium heat and add the coconut oil. Place a slice of bread into the bowl, making sure to flip it over to coat both sides thoroughly with the eggy mixture, then place it into the hot pan. You don't want to overcrowd the pan, so make sure to only cook 1 or 2 at a time.
Cook each slice until it is golden brown on both sides. This should take 2 to 3 minutes on each side.
Remove the finished French toast slices from the skillet. Soak additional bread in the egg mixture and add to the pan.
Continue cooking the French toast, dipping the bread only before cooking it, in batches.
Serve the French toast warm with fresh berries and extra maple syrup if desired.
