2 large white peaches, pits and skin removed and roughly chopped
Juice from 1 lemon
1 tablespoon honey
1 750-milliliter bottle Prosecco
Directions
Combine the peaches, lemon juice, and honey in a blender. Blend until very smooth.
Strain the peach purée into a bowl through a fine mesh strainer. Use a spoon or spatula to push the mixture through.
To assemble cocktails, pour 4-6 tablespoons of peach purée into champagne flutes. Fill the glass halfway with Prosecco, and stir or whisk until the peach puree is combined. Top with Prosecco, to serve.
