Bobby Flay Learned A Cheesy Pasta Trick From Giada De Laurentiis
BY JULIA HOLLAND
Seasoned chef Bobby Flay is always open to new tips, like Chef Giada De Laurentiis’ trick for sprinkling freshly cooked pasta with Parmesan cheese before adding the sauce.
The cheese not only adds a salty, nutty flavor to the dish, but it also provides a sticky surface for the sauce to adhere to, meaning a richer flavor from the sauce as well.
In turn, Flay gave his own pasta tip: add butter to your sauce before the pasta. The butter helps emulsify the sauce while enriching its flavor and texture.
You can also add pasta water or an egg to your sauce to help emulsify it, creating a thicker, richer texture and helping it stick to your pasta better.
