Can You Refrigerate Sweet Potatoes?
By MEGGAN ROBINSON
Versatile, delicious, and nutritious, sweet potatoes are a tasty addition to many recipes and make a great dish on their own. With so many uses, you’ll want to keep a stockpile of these tubers in your kitchen, but how should you store sweet potatoes so they last the longest?
Many fruits and vegetables last longer and taste better when stored in the refrigerator, but regular potatoes are an exception, and the same goes for sweet potatoes. When stored in the fridge, sweet potatoes can develop an off flavor as well as a hard, dense center with white spots.
Rather than refrigerating your sweet spuds, it’s best to store them in a cool, dry place that’s properly ventilated, such as a basement, in a cabinet, or a basket on the counter away from sunlight. If properly stored, sweet potatoes should keep for about two weeks.
