Chimayó Is The Spiced Apple Cider Cocktail You’ve Been Missing

Just like pumpkin spice dominates fall flavors, dark liquors like rum, cognac, and whiskey dominate fall cocktails. For all the tequila fans out there who can't wait until spring to indulge in a tequila-based cocktail, there’s an autumnal drink that’s perfect for you: The Chimayó.
The Chimayó is reminiscent of a hot toddy but is served chilled, and unlike a toddy, it doesn’t feature brandy. To make a Chimayó combine reposado tequila, crème de cassis, dark apple cider, and spiced syrup. Then, serve over ice in a Collins glass or shaken and poured into a martini glass.
Crème de cassis is a tart liqueur made of black currants, giving the drink a fruity dimensionality. For more depth, choose Casamigos reposado tequila which brings notes of spicy oak and dried fruit to the flavor profile. The result is a fruity but not overly sweet cocktail that goes down shockingly smooth.
