Feta Brine Is The Unanticipated Ingredient Your Roasted Chicken Needs

Roasted chicken is a delicious meal made all the better by brining the bird for flavor and juiciness. To take your brine up a notch, use the liquid from a container of feta.
The leftover liquid in a package of feta has a distinctly tangy, salty flavor from the cheese. It's more flavorful than a simple chicken brine of salt and water.
It may take multiple tubs of feta to accumulate enough brine to submerge a whole chicken, so collect and store the liquid in a container until you have enough.
On average, you’ll need four to five cups of feta brine. Submerge the chicken in the liquid and let it sit in a large, airtight container in the fridge for at least eight hours.
Allow the chicken to come up to room temperature before roasting. For extra Mediterranean flair, serve the chicken with tomatoes, cucumbers, Kalamata olives, and/or more feta.
