German Cottage Potatoes Give New Flavor To Eggs And Bacon

German cottage potatoes, or Bratkartoffeln, have crispy edges, soft centers, and a few extra flavorings. They're the perfect accompaniment to any meal, including breakfast.
Cottage potatoes are distinct from other fried potato dishes because they include diced onions and crispy bacon, which imbue the whole dish with savory, umami flavor.
Bratkartoffeln are used as a side for meals at any time of the day, whether with bratwurst or Schnitzel, alongside a burger, or with eggs and bacon in the morning.
Starchy or waxy potatoes both work for this dish. Parboil the potatoes whole, peel them, and thinly slice them into coin shapes about a quarter of an inch thick.
Sauté chopped onions until translucent and slightly caramelized, then chop and cook bacon crisply. Add all the ingredients together in a pan and fry until the potatoes crisp up.
Season with salt, pepper, and optional spices like marjoram, caraway, rosemary, and paprika. Feel free to add green peppers, and top with sour cream, green onions, or apple sauce.
