Give Mushrooms An Umami Boost With A Splash Of One Ingredient

Whether you're caramelizing, stir-frying, or oven-roasting your mushrooms, adding a splash of fish sauce to them near the end of cooking can give them an umami, meaty flavor.
Umami is a flavor sensation caused by food items rich in the amino acid glutamate. Fish sauce has one of the highest glutamate contents of any food, making each drop umami-rich.
Made by fermenting anchovies with salt and water, fish sauce is high in sodium and must be used like salt. To avoid ruining your mushrooms, add the sauce slowly, tasting as you go.
