Give Pork Tenderloin A Mexican Food Twist Using Tomatillo Sauce

Known as carne de puerco en salsa verde in Mexico, pork cooked with tomatillo salsa verde is a dish eaten throughout the country and one you can easily make with pork tenderloin.
Traditionally, pork spare ribs cut into bite-sized pieces are used in the dish, but cubed tenderloin is easier and less messy since they are boneless.
For a basic recipe, boil the pork in salted water to ensure it’s fork-tender but not cooked all the way. Afterward, you’ll want to drain the pork, reserving the broth.
Using a large Dutch oven or heavy pot, brown the pork on all sides with a bit of oil until they are caramelized. Remove the pork and add the salsa to the same pot.
Add the pork and enough broth so it simmers nicely. At this point, you can add cubed potatoes or zucchini if you want. Cover and simmer until meat and veggies are tender.
