Homemade Cream Cheese Is Way Easier To Make Than You Think
BY LINDSAY CRONIN
If you run out of the standard Philadelphia cream cheese, you can easily make your own at home with just a few ingredients: milk, lemon juice, and salt.
To start, heat 4 cups of whole milk on medium-high, then let it simmer before reducing the heat and adding 2 to 3 tablespoons of lemon juice.
Once the mixture starts curdling, stir until it separates with liquid on the bottom and curdles on top, then take it off heat. Strain it with a cheesecloth and then let it cool.
At this point, you should remove any excess moisture and toss the cream into a food processor to make it smooth. From there, you can season it with salt or other flavors.
