Although roasting a chicken appears to be a fairly straightforward operation, there are many tiny processes that can make or break your bird. The goal of many of these steps is to produce the juiciest chicken possible, and there is now an unusual ingredient that is certain to produce the juiciest chicken.
Milk is a unique ingredient that can help get a chicken to its juiciest state. This unconventional cooking method was first developed by Jamie Oliver, who suggested creating a sauce using milk, garlic cloves, lemon zest, cinnamon sticks, and sage, then baste-cooking it over the chicken for 90 minutes to get an incredibly tender result.
According to Taste of Home, milk's high calcium content helps to tenderize chicken, and TheForkBite adds that lactic acid in buttermilk and yogurt helps to "tear down" chicken's tough collagen and protein. Therefore, whichever technique or milk product you pick, you can be confident that the result will be a juicy chicken that everyone will love.
