How To Cook Up Crispy Fried Chicken Without Using Flour

You can make delicious, crispy fried chicken without flour simply by using a good flour substitute, whether it be potato starch, rice flour, or cornmeal.
Common in East Asia, potato starch and rice flour are popular for absorbing moisture, resulting in an ultra-crispy texture that doesn't fade away as they cool.
While cornmeal won’t give you the same crisp, its larger granules don’t get as soggy and it adds a nice toasted corn note since it’s more naturally flavorful than the other two.
For any of these substitutes, aim to drop them into oil around 350 degrees Fahrenheit, lowering it to 300 to 325 degrees Fahrenheit as they fry to prevent burning.
