Ina Garten's Cooking Water Tip For Delicious Potato Salad
BY KYLE GRACE MILLS
Ina Garten, queen of easy entertaining, is helping cooks create legendary potato salad, a deceptively simple recipe that can be difficult to execute.
Coming from Garten's cookbook "Go-To Dinners," all you need is your leftover potato water to elevate the texture of potato salad.
Garten credits the idea to the late Julia Child, who recommended that you use your potato cooking water to add creamy starch to your sauces.
Any potato salad recipe will work with this pro tip. All you need to do is put a measuring cup under your colander when you drain your potatoes to catch some of the starchy water.
You’ll only need to add a splash or two of the starchy water to your dressing. Don't worry if the mixture appears a little thinned out as it will set in the fridge.
Be careful to stick to a few splashes of the boiled potato water only, as you don't want to dilute the dressing completely.
If you use salted water to cook your potatoes, be sure to taste as you go, so that you can adjust the seasoning as called for.
