Ina Garten's Go-To Suggestion For A Special Meal Just For 2

When having a meal for two, chef Ina Garten shares that roast pork loins served with a potato, apple, and fennel purée and shaved brussels sprouts is at the top of her list.
Garten explains that pork loins are small and they can be marinated and roasted simply. The recipe she shared with Food Network uses three and a half pounds of loin and serves six.
If you’re only cooking for two, you'll only need a bit more than a pound of it. There are a few different ways you could cook the loin, but it’s a reliably simple cut to get right.
Garten blends potatoes, apples, fennel, celery root, apple cider, and heavy cream to make the purée. She prefers roasted brussels sprouts for their crispy texture.
