Ina Garten's Simple Ingredient Tip For Moist Cornbread Muffins
By KAREN HART

It's no secret that celebrity chef Ina Garten is a fan of cornbread, and she has a perfect (and easy) fix for dry cornbread muffins that involves just one simple ingredient.
A small wooden bowl of finely ground cornmeal
Garten revealed that when she makes cornbread muffins, she uses finely ground cornmeal, which absorbs the wet ingredients better and makes for a moister texture.

The larger the grind of cornmeal, the slower the grains will absorb your wet ingredients, which means that cornbread muffins made with coarser cornmeal often turn out dry.

If using fine cornmeal still doesn’t give you the moisture you want, try adding buttermilk to your batter as a substitute for milk or sour cream, which should help to soften it up.
