Is The Rind On Brie Cheese Safe To Eat?

Brie cheese is loved for its decadent, velvety mouthfeel and mildly nutty, salty flavor profile — but the rind of brie cheese isn't quite as universally beloved.
Some brie cheese rinds will have a slight ammonia taste, which isn't too appetizing. While it won't hurt you if consumed, people tend not to like the flavor.
Much of the confusion surrounding brie cheese rind has to do with the fact that mold is growing on the cheese. However, it's edible mold and essential to making brie.
Brie should be white or cream colored. If you notice blue, gray, or green discoloration, then you are almost certainly going to want to throw the whole thing out.
To serve brie, definitely don't remove the rind. If anyone eating the cheese with you doesn't like the rind, you can let them peel it apart to get at the gooey interior.
