It's So Easy To Make Bobby Flay's Favorite Sauce For Fish Dishes
BY Anna Staropoli
Bobby Flay has a few tricks when it comes to cooking fish, such as his simple fish sauce addition for any of your favorite seafood recipes: vinaigrette.
While working at Jonathan Waxman's New York City restaurant Jams, Flay started using vinaigrette as a fish sauce because of its association with California cuisine.
During an interview with Bon Appetit, the chef explained that the heat from a warm cooked fish "allows the flavors in the vinaigrette to open up."
According to Flay, vinaigrette adds moisture to fish and can make even the mildest dishes something far more flavorful.
