J. Kenji Lopez-Alt's Go-To Bread For Breakfast Sandwiches

You may think that pro chefs would never take a glance at fast food, but Julia Child, Anthony Bourdain, and Gordon Ramsay have all declared their serious affection for In-N-Out Burger. Similarly, J. Kenji López-Alt has a big love for Popeye's — and he even likes to cook with one of the chicken chain's menu items.
On Serious Eats, López-Alt declared that one of the best things to do with a Popeye's biscuit is to use it as the base for a breakfast sandwich. He wraps the biscuits in foil before reheating them in the oven, then fills them with a fried egg, bacon, and a slice of American cheese, cut in a certain way so that it covers both the biscuit and the egg.
López-Alt points out that Popeye's doesn't offer its own breakfast sandwiches; plus, the chain is quite protective of its biscuit recipe — all we know is that they're made with buttermilk. If you've ever had an inexplicable craving for a Popeye's breakfast sandwich, simply use what you can get in the drive-thru to fulfill your fantasy.
